Ingredients
  

  • 2 slices bacon Cut into small pieces.
  • 1 lb. small golden potatoes Diced into medium-sized pieces.
  • 2 tablespoons olive or avocado oil For cooking.
  • Salt, pepper, and Old Bay seasoning To taste.
  • 1-2 cloves garlic Minced.
  • 1 tablespoon pure maple syrup For drizzling.
  • fresh parsley or chives Optional for garnish.

Instructions
 

  • Cut bacon into small pieces and set aside; freezing for 30 minutes makes cutting easier.
  • Dice the potatoes and soak them in cold water to prevent browning.
  • Drain and dry the potatoes, then heat oil in a skillet and cook the potatoes with seasonings for about 10 minutes.
  • Add bacon to the skillet and cook until crisp, mixing with the potatoes.
  • Reduce heat, add minced garlic, and cook until fragrant.
  • Drizzle maple syrup over the mixture, toss, and cook for an additional minute before garnishing.

Notes

For easier bacon cutting, use kitchen shears. Ensure potatoes are dried well before cooking for better texture. Adjust seasonings to taste during cooking.
