Rice/Grains

  • 1 cup cooked rice Cook according to package instructions.

Veggies

  • 1/2 cup broccoli florets Sauté until tender-crisp.
  • 1/2 cup bell peppers, sliced Sauté with broccoli.

Sauce

  • 1/2 cup mayonnaise For a dairy-free option, use vegan mayo.
  • 2 tablespoons sweet chili sauce Adjust based on sweetness preference.
  • 1 tablespoon sriracha Adjust to taste.

Spices & Cooking

  • to taste salt and pepper

Toppings

  • 1/4 cup green onions, chopped For garnish.

Preparation

  • Cook the rice according to package instructions and keep warm.
  • In a bowl, mix mayonnaise, sweet chili sauce, and sriracha to create the Bang Bang sauce; taste and adjust heat.
  • Season the chicken breasts with salt and pepper on both sides.

Cooking

  • Heat olive oil in a pan over medium heat and cook chicken about 6–7 minutes per side, until fully cooked through.
  • Remove chicken from the pan, let it rest a few minutes, then slice thinly.
  • In the same pan, sauté broccoli and bell peppers until tender-crisp, about 4–5 minutes.

Assembly

  • Assemble bowls with rice on the bottom, sautéed veggies, sliced chicken, then drizzle the Bang Bang sauce and garnish with green onions. Serve warm.

Notes

Store sauce separately from rice to keep leftovers from getting soggy. For heartier options, serve with roasted potatoes.
