Ingredients
  

For the Creamy Avocado Sauce

  • 1/2 medium Avocado
  • 1/4 cup Sour Cream Can be replaced with full-fat Greek yogurt.
  • 1 tbsp fresh Lemon or Lime Juice
  • 1/4 cup Cilantro Leaves Cilantro is optional; omit if preferred.
  • 1/2 tsp Kosher Salt Adjust to taste.
  • 2 tbsp Water Adjust as needed.

For the Ground Turkey + Black Bean Filling

  • 2 tsp Avocado Oil or Olive Oil
  • 8 oz Lean Ground Turkey Options include 85/15 or 90/10.
  • 2 1/2 tsp Homemade Taco Seasoning Can substitute with store-bought seasoning.
  • 1/3 cup chopped Onion Yellow or white.
  • 3/4 cup canned Black Beans Drained, not rinsed.
  • 4 oz Green Chiles Any small can can be used.
  • 2 tbsp finely chopped Cilantro Optional.

Small Batch Homemade Taco Seasoning

  • 1/2 tsp Cumin
  • 1/2 tsp Mexican Oregano or Italian Oregano
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Kosher Salt
  • 1/4 tsp Smoked Paprika
  • 1/4 tsp Chili Powder
  • 1/8 tsp Cayenne Pepper Optional.

For the Tacos

  • Cooking/Baking Spray or Avocado Oil For brushing.
  • 1 1/2 cups shredded Monterey Jack Cheese Can be swapped with Pepper Jack or Cheddar.

Instructions
 

Preparation

  • Blend avocado, sour cream, lime juice, cilantro, salt, and water until smooth for the avocado sauce, then refrigerate.
  • Heat oil in a pan, cook turkey with half of the taco seasoning and onion until browned.
  • Add black beans, green chiles, remaining seasoning, and cilantro to the turkey mixture; simmer for 15 minutes.
  • Preheat oven to 425°F, prepare baking sheet, and arrange tortillas with cheese and turkey mixture.
  • Bake until cheese melts, fold tortillas, brush with oil, and bake until golden and crispy.
  • Serve tacos with avocado sauce in small bowls.

Notes

Store leftovers in an airtight container for up to 4 days; store avocado sauce separately for up to 3 days. Reheat in an air fryer or oven to restore crispiness. Can be made into lettuce wraps for a lower-carb option.
