Ingredients

  • 200 g feta cheese

Pasta

  • 200 g orzo pasta

Veggies

  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced

Sauce / Oil

  • 1/4 cup olive oil

Spices

  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Toppings

  • Fresh basil or parsley for garnish

Baking

  • Preheat the oven to 400°F (200°C).
  • In a baking dish, combine the orzo, cherry tomatoes, olive oil, garlic, oregano, salt, and pepper.
  • Place the feta cheese in the center of the orzo mixture.
  • Bake in the preheated oven for about 25-30 minutes, until the feta is golden and the orzo is cooked.
  • Stir everything together until creamy, breaking up the feta and coating the orzo with the roasted tomatoes.
  • Garnish with fresh basil or parsley before serving.

Notes

Use a shallow baking dish for even cooking. Check orzo at 20 minutes for desired texture; adjust seasonings as feta can be salty. Store leftovers in the fridge for 3-4 days.
