Ingredients
  

  • 8-10 slices thick-cut Bacon
  • 1 Tablespoon Butter or Olive Oil
  • 1 large Onion, diced
  • 2 large Carrots, peeled and sliced
  • 4 cups Chicken Broth low-sodium recommended
  • 1 to 2 teaspoons Salt to taste
  • 1 teaspoon Pepper freshly ground preferred
  • 1 teaspoon Garlic Powder or 4 cloves minced garlic
  • 1/4 teaspoon Dried Thyme
  • 1/2 to 1 teaspoon Red Chili Flakes to taste
  • 16 ounces Gnocchi fresh or frozen
  • 2 cups Heavy Cream or Half-n-Half
  • 2 cups Cheddar Cheese sharp recommended

Instructions
 

  • Cook the bacon in a large pot over medium heat until crispy, then chop into small pieces after cooling.
  • Sauté the diced onions and sliced carrots in the same pot with butter or olive oil until tender and translucent.
  • Pour in the chicken broth and bring to a simmer to blend the flavors.
  • Stir in the heavy cream, salt, pepper, garlic powder, thyme, and red chili flakes, then simmer gently.
  • Gradually add the cheddar cheese, allowing it to melt completely after each addition.
  • Stir in the gnocchi and cook for 2 minutes, then add the reserved bacon pieces and serve hot.

Notes

Customize by substituting turkey bacon or using different cheese blends like mozzarella. Add vegetables such as spinach or peas for added nutrition and color. Store leftovers in an airtight container in the refrigerator for up to three days. Reheat gently over medium heat, adding a splash of broth or cream to maintain texture.
