Ingredients
  

  • 4 medium sweet potatoes
  • 2 tablespoons butter or vegan butter
  • 2 apples peeled and diced (Honeycrisp or Granny Smith are best)
  • 1 tablespoon maple syrup
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • teaspoon ground cloves
  • ¼ teaspoon salt
  • ¼ cup chopped pecans optional
  • 2 tablespoons dried cranberries optional
  • Greek yogurt or whipped cream optional for topping

Instructions
 

  • Preheat your oven to 400°F.
  • Poke the sweet potatoes with a fork and roast on a baking sheet for 45 to 55 minutes until soft and caramelized.
  • While the sweet potatoes are roasting, melt the butter in a skillet.
  • Add diced apples and cook for 5 to 7 minutes until softened.
  • Stir in maple syrup, cinnamon, nutmeg, cloves, and salt.
  • Let everything simmer for 2 more minutes until the apples are coated in warm, sweet syrup.
  • Slice open each sweet potato lengthwise and fluff the inside with a fork.
  • Spoon the warm apple filling into each potato and let the juices soak in.
  • Sprinkle with chopped pecans and dried cranberries if desired.
  • Add a dollop of Greek yogurt or whipped cream for extra indulgence.

Notes

Swap butter for coconut oil for a vegan option. Roast potatoes and prep filling ahead for easy assembly. For crispy edges, broil for the last 2 minutes.
