Ingredients
  

Vegetables

  • 2 medium zucchinis

Coating

  • 1 cup breadcrumbs (panko preferred) For extra crunch, panko is recommended.
  • 1/2 cup grated Parmesan cheese

Binders

  • 1 whole egg Beaten

Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper To taste

  • Cooking spray For spraying the air fryer basket

Instructions
 

Preparation

  • Preheat the air fryer to 400°F (200°C).
  • Cut the zucchinis into sticks about 3 inches long and 1/2 inch thick.
  • In a bowl, combine breadcrumbs, Parmesan, garlic powder, onion powder, salt, and pepper.
  • Beat the egg in another bowl, then dip each zucchini stick in the egg and press into the breadcrumb mixture to coat.

Cooking

  • Place coated sticks in a single layer in the air fryer basket, spray lightly with cooking spray, and cook for 10–12 minutes, flipping halfway, until golden and crispy.
  • Serve hot with your favorite dipping sauce.

Notes

Pat zucchinis dry before coating to help crumbs adhere and stay crisp. Don’t overcrowd the basket; cook in batches for even browning. Use panko for extra crunch, spray lightly with oil for a golden color. Store leftovers in an airtight container and reheat in the air fryer for best texture.
