Ingredients
  

Vegetables

  • 2 medium zucchinis

Coating

  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese

Eggs

  • 2 large eggs

Spices

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste none salt
  • to taste none pepper

Instructions
 

Preparation

  • Preheat the air fryer to 400°F (200°C).
  • Wash and cut the zucchinis into fry-shaped pieces.
  • In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  • In another bowl, beat the eggs.

Coating

  • Dip each zucchini fry into the egg, then coat with the breadcrumb mixture.

Cooking

  • Place the coated zucchini fries in the air fryer basket in a single layer.
  • Cook for 10–12 minutes, flipping halfway through, until golden brown and crispy.
  • Remove from the air fryer and serve hot.

Notes

Tips for Success: Pat zucchini dry before coating for crispier results. Don’t overcrowd the basket; cook in batches for even browning. For extra crunch, use panko breadcrumbs or spray lightly with oil before cooking. Store leftovers in an airtight container in the fridge for up to 3 days and re-crisp in the air fryer.
