Ingredients
  

Vegetables

  • 2 medium zucchini Sliced into even sticks

Coating

  • 1 cup breadcrumbs (preferably panko) For a crispy texture
  • 1/2 cup grated Parmesan cheese Adds flavor and helps with crisping

Eggs

  • 2 large eggs For coating the zucchini

Spices

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

  • Cooking spray For air frying

Preparation

  • Wash and slice the zucchini into even sticks about 1/4 to 1/2 inch thick.
  • Set up the coating stations: whisk the eggs in one bowl; in another bowl combine breadcrumbs, Parmesan, garlic powder, onion powder, paprika, salt, and pepper.

Coating Zucchini

  • Dip each zucchini stick into the egg, then press into the breadcrumb mixture so each piece is evenly coated.

Cooking

  • Preheat the air fryer to 400°F (200°C) for about 5 minutes.
  • Place coated zucchini fries in a single layer in the air fryer basket without overlapping; work in batches if needed.
  • Lightly spray the fries with cooking spray and cook at 400°F for 12–15 minutes, shaking the basket halfway through; add 2-minute increments if not yet golden.
  • Remove when golden and crispy, then serve immediately while hot.

Notes

Slice zucchini uniformly so fries cook evenly and finish at the same time. Don’t overcrowd the basket; single layers give the best crisp. Use panko and a light spray of oil to maximize crunch without excess fat. Store leftovers in the fridge and re-crisp in the air fryer for best texture. Variations include making it spicy, dairy-free, or adding herbs for extra flavor.
