Ingredients
  

Vegetables

  • 2 medium zucchinis Cut into fry shapes

Coating

  • 1 cup breadcrumbs Use panko for extra crunch if desired
  • 1/2 cup grated Parmesan cheese Can substitute with nutritional yeast for dairy-free option

Binders

  • 2 large eggs Beaten

Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper

Finishing

  • Cooking spray or oil for spraying To help with browning

Preparation

  • Preheat your air fryer to 400°F (200°C).
  • Cut the zucchinis into fry shapes and set aside.
  • In one bowl, beat the eggs. In another bowl, mix the breadcrumbs, Parmesan, garlic powder, onion powder, salt, and pepper.

Breading & Cooking

  • Dip each zucchini fry into the egg, then coat it well in the breadcrumb mixture.
  • Place the coated fries in a single layer in the air fryer basket and spray lightly with cooking spray.
  • Air fry for 10–12 minutes, turning halfway, until golden and crispy; serve immediately.

Notes

Pat zucchini dry to prevent soggy coating and improve crispiness. Don't overcrowd the basket; air needs to circulate for even browning. If fries brown too quickly, lower temp to 375°F and add a couple extra minutes. Reheat in the air fryer at 350°F for 3–4 minutes to restore crispiness.
