Ingredients
  

Vegetables

  • 2 medium zucchinis Cut into fry shapes.

Coating

  • 1 cup bread crumbs
  • 1/2 cup grated Parmesan cheese Can be substituted for a dairy-free option.

Eggs

  • 2 large eggs Beaten for coating.

Seasoning

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Finishing

  • Cooking spray For spraying the fries.

Preparation

  • Preheat your air fryer to 400°F (200°C).
  • Cut the zucchinis into fry shapes, about 3 inches long and 1/2 inch thick.
  • Beat the 2 large eggs in one bowl; in another bowl mix bread crumbs, Parmesan, garlic powder, onion powder, salt, and pepper.

Cooking

  • Dip each zucchini fry into the beaten egg, then press into the breadcrumb mixture to coat well.
  • Arrange fries in a single layer in the air fryer basket and spray lightly with cooking spray.
  • Cook 10–12 minutes until golden and crispy, shaking the basket halfway through.
  • Serve immediately with your favorite dip and enjoy.

Notes

Pat zucchini dry with a paper towel to reduce sogginess before coating. Don’t overcrowd the basket; cook in batches for even crisping. Spray lightly with oil rather than drenching. Store leftovers in the fridge up to 3 days and re-crisp in the air fryer.
