Ingredients
  

Veggies

  • 2 medium zucchinis

Breading

  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese

Eggs

  • 2 eggs

Seasoning

  • to taste salt
  • to taste pepper

Instructions
 

Preparation

  • Preheat the air fryer to 400°F (200°C).
  • Cut zucchinis into fry-shaped sticks, about 3 inches long and 1/2 inch thick.
  • In one bowl, beat the eggs; in another bowl, mix breadcrumbs, Parmesan, salt, and pepper.

Coating

  • Dip each zucchini stick into the egg, then coat thoroughly with the breadcrumb mixture.

Cooking

  • Arrange coated zucchini fries in a single layer in the air fryer basket and spray lightly with olive oil.
  • Air fry for 12–15 minutes, shaking the basket halfway through, until golden brown and crispy.
  • Serve warm and enjoy!

Notes

Pat zucchinis dry before breading to help the coating stick and stay crisp. Don’t overcrowd the basket; work in batches for even browning. Store leftovers in the fridge and re-crisp in the air fryer at 375°F for 4–6 minutes.
