Ingredients
  

Veggies

  • 2 medium zucchini Washed and cut into fries

Breading

  • 1 cup breadcrumbs (panko or regular)
  • 1/2 cup grated Parmesan cheese

Spices

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • to taste Salt and pepper

Wet ingredients & oil

  • 2 large eggs Whisked
  • 1 tablespoon olive oil Added to egg mixture

Instructions
 

Preparation

  • Wash the zucchini and cut them into fries or sticks about 1/4 inch thick.
  • In a shallow bowl, mix breadcrumbs, grated Parmesan, garlic powder, onion powder, paprika, salt, and pepper.
  • In another bowl, whisk the eggs and add the olive oil to create a cohesive mixture.
  • Preheat the air fryer to 400°F (200°C) for about 5 minutes.

Cooking

  • Dunk each zucchini fry first into the egg mixture, letting excess drip off, then coat in the breadcrumb mixture, pressing gently to adhere.
  • Arrange the coated fries in a single layer in the air fryer basket (work in batches if needed).
  • Air fry for 8–10 minutes, flipping halfway, until golden brown and crispy.
  • Remove and serve immediately with fresh herbs or your favorite dip.

Notes

Pat zucchini dry to remove excess moisture for crisp coatings. Don’t crowd the basket to allow even browning. For extra crunch, use panko breadcrumbs and press firmly when coating. Serve with marinara, ranch, or lemon-garlic aioli.
