  • 2 medium zucchinis

Breading

  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese

Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

  • 1 large egg
  • Cooking spray or olive oil

Preparation

  • Preheat the air fryer to 400°F (200°C).
  • Slice the zucchinis into thin rounds, about 1/8 inch thick, for even crisping.
  • In a bowl, mix breadcrumbs, Parmesan, garlic powder, salt, and pepper until combined.
  • In another bowl, beat the egg; dip each zucchini slice into the egg, then press into the breadcrumb mixture to coat.
  • Spray the air fryer basket with cooking spray or brush lightly with olive oil, place slices in a single layer, and cook for 10–12 minutes until golden, shaking the basket halfway through.

Serving

  • Serve hot and enjoy with marinara sauce or ranch for dipping.

Notes

Pat slices dry with a paper towel to remove excess moisture and help them crisp. Don’t overcrowd the basket; cook in batches for best results and even browning. If chips aren't crispy enough, add 1–2 extra minutes and check frequently to avoid burning. Store leftovers in an airtight container in the fridge for up to 3 days and re-crisp in the air fryer for a few minutes. For a flavor twist, try adding smoked paprika or Italian seasoning to the breadcrumb mix.
