  • 3 medium medium-sized zucchini About 1½ pounds

Oil

  • 2 teaspoons extra virgin olive oil

Spices

  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • 2 twists black pepper

Preparation

  • Preheat the air fryer to 400°F (200°C) for about 3 minutes.
  • Wash and dry the zucchini; trim off both ends.
  • Cut each zucchini in half lengthwise and then into ¼-inch half-discs.
  • In a mixing bowl, toss the chopped zucchini with olive oil, paprika, garlic powder, oregano, salt, and pepper until evenly coated.

Cooking

  • Place half of the seasoned zucchini in the air fryer basket in a single layer.
  • Air fry for 7–9 minutes until tender-crisp and lightly browned, shaking or flipping halfway.
  • Repeat with the remaining zucchini if needed, then serve warm.

Notes

Don’t overcrowd the basket; a single layer crisps best. Cut uniformly (¼-inch) so pieces cook evenly. Increase heat briefly at the end for extra crispiness and adjust time based on your air fryer model.
