  • 2 pounds zucchini, diced into ½-inch pieces

Oil & Seasonings

  • 1 tablespoon olive oil, extra-virgin (other oils work as well)
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ¼ teaspoon black pepper

Preparation

  • Install the air fryer's grilling rack in the basket and preheat the air fryer to 400° Fahrenheit.
  • Place the zucchini pieces in a medium mixing bowl, drizzle with olive oil, and top with onion powder, garlic powder, salt, and pepper.
  • Toss to coat evenly so each piece is lightly oiled and seasoned.

Cooking

  • Arrange the zucchini on the air fryer's grilling rack in a single layer without crowding the pieces.
  • Air fry for 8–10 minutes, shaking the basket once during cooking, until golden brown and crispy on the outside and tender inside.
  • Remove carefully and serve hot.

Notes

Don’t overcrowd the rack to ensure roasting instead of steaming. For extra crispiness, air fry 1–2 minutes longer while watching closely. Store leftovers in an airtight container in the fridge for up to 3 days.
