Air Fryer Roasted Zucchini

Ingredients
  

Vegetables

  • 2 medium medium zucchini (about 1–1.5 pounds)

Oil

  • 1 tablespoon olive oil (or avocado oil)

Seasonings

  • 1 teaspoon salt
  • 1 tablespoon nutritional yeast
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon black pepper

Preparation

  • Trim and cut zucchini: Cut off the ends, halve each zucchini lengthwise, halve again lengthwise, then cut each spear into 1/2" slices.
  • Salt and sweat: Lay slices on a kitchen towel, sprinkle 1 teaspoon salt over them, and let sit for 20 minutes.
  • Pat dry: Blot slices dry with a towel or paper towels after sweating.

Cooking

  • Mix seasoning and preheat: Combine remaining spices in a small bowl. Preheat air fryer to 450°F for about 5 minutes.
  • Toss and arrange: Toss zucchini with 1 tablespoon oil in a medium bowl, sprinkle with seasoning mix, and coat. Spread in air fryer basket in a single layer.
  • Air fry: Cook at 450°F for 7–8 minutes, stirring halfway through, until browned and tender inside.

Notes

For best results, don’t slice zucchini thinner than 1/2" and ensure they are very dry after sweating. Store cooled leftovers in an airtight container for up to 3 days.
