Preparation

  • Preheat the air fryer to 400°F (200°C).
  • Wash and slice the zucchinis into rounds or half-moons about 1/4-inch thick.
  • In a bowl, toss the zucchini slices with olive oil, salt, pepper, garlic powder, and Italian seasoning until evenly coated.

Cooking

  • Place the seasoned zucchini in the air fryer basket in a single layer, working in batches if needed to avoid overcrowding.
  • Cook for 10–12 minutes, shaking the basket halfway through, until the zucchini is tender and slightly crispy on the edges.
  • Serve immediately as a side dish while hot.

Notes

Don't overcrowd the basket for crispiness; slice evenly for uniform cooking. Store leftovers in an airtight container for up to 3 days. For a cheesy finish, add grated parmesan in the last 1–2 minutes of cooking.
