Rice/Grains

Sauce

  • 1/4 cup fresh orange juice
  • 2 tablespoons orange zest
  • 2 tablespoons soy sauce (or gluten-free alternative)
  • 1 tablespoon honey (optional for sweetness)

Aromatics & Flavor

  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced

Seasoning

  • Salt and pepper to taste

Preparation

  • In a bowl, combine the orange juice, orange zest, garlic, ginger, soy sauce, and honey.
  • Add the chicken pieces, toss to coat, and let marinate for at least 10 minutes.
  • Preheat the air fryer to 380°F (193°C).

Cooking

  • Place the marinated chicken in the air fryer basket in a single layer, avoiding overcrowding.
  • Cook for 12–15 minutes, shaking the basket halfway through, until the chicken is cooked through and slightly crispy.
  • Season with salt and pepper to taste.
  • Serve warm over rice.

Notes

Marinate at least 10 minutes to let flavors penetrate the chicken; up to 1 hour is fine. Don't overcrowd the basket — cook in batches for best crisping. Shake the basket halfway through to ensure even browning. If you prefer a thicker glaze, simmer the remaining marinade in a small pan until reduced and spoon over the cooked chicken. For a fresher, bright contrast, serve with a simple apple walnut salad.
