Ingredients
  

Veggies

  • 2 medium zucchini, sliced into rounds Dry zucchini slices well with paper towels before coating.

Coating

  • 1 cup breadcrumbs (can use whole wheat or gluten-free) Panko breadcrumbs can be used for a lighter crunch.
  • 1/2 cup grated Parmesan cheese For a dairy-free version, substitute nutritional yeast.

Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Finishing

  • Cooking spray or olive oil spray Use to lightly spray zucchini before air frying.

Preparation

  • Preheat the air fryer to 400°F (200°C).
  • In a bowl, mix the breadcrumbs, Parmesan, garlic powder, onion powder, salt, and pepper.
  • Press each zucchini slice into the breadcrumb mix so the coating sticks well.

Cooking

  • Arrange coated zucchini in a single layer in the air fryer basket without overlapping.
  • Lightly spray the zucchini with cooking spray and air fry for 8–10 minutes, flipping halfway, until golden and crispy.
  • Serve hot as a snack or side with your favorite dip.

Notes

For serving, pair with marinara, ranch, or lemon-garlic aioli for dipping. Storage: Keep leftovers in an airtight container and reheat in the air fryer to revive crispness.
