Batter & Coating

  • 1 cup Buttermilk (or milk with lemon juice)
  • 1 cup Flour (substitute with gluten-free flour for a gluten-free option)

Spices

  • 1 tbsp Paprika (consider using smoked paprika for extra flavor)
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 0.5 tsp Cayenne Pepper (adjust according to taste)
  • 1 tsp Salt
  • 1 tsp Pepper

Finishing

Instructions
 

Preparation

  • Trim the top and root end of the onions so they can sit flat, then slice 8–10 cuts from the top toward the root to create a bloom, keeping the root intact.
  • Pour buttermilk into a bowl and soak the cut onions for 10 minutes to help the coating stick and mellow the onion.

Batter Preparation

  • Whisk flour, paprika, garlic powder, onion powder, cayenne, salt, and pepper in a shallow bowl.

Dredging

  • Shake excess buttermilk off each onion, then dredge inside and out in the flour mixture so each petal is coated.

Air Frying

  • Preheat the air fryer to 375°F. Place onions petal-side up in the basket, spray lightly with cooking spray, and air fry for 10–12 minutes until golden.
  • Flip carefully if needed and crisp for another 2–4 minutes for even color and texture. Remove and let rest for 2 minutes before serving.

Notes

Keep the root intact while slicing so the petals stay connected during cooking. Don’t overcrowd the air fryer; give each onion room for hot air to circulate for even crisping. Lightly spray the coated onion with oil for a golden finish without deep frying. Adjust cayenne to your heat preference and taste the dry mix before dredging. Re-crisp leftovers in the air fryer at 350°F for 3–5 minutes instead of microwaving.
