Ingredients

Protein

  • 1 lb boneless skinless chicken breast, sliced into 1/2-inch strips

Veggies

  • 2 pieces bell peppers, sliced
  • 1 small red onion, sliced

Spices

  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon white sugar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Oil & Base

  • 2 tablespoons olive oil
  • small pieces flour tortillas or corn tortillas Use a gluten-free variety if necessary

Optional toppings

  • avocado or guacamole
  • salsa
  • shredded cheddar cheese
  • sour cream
  • sliced jalapeno
  • cilantro
  • thinly sliced romaine lettuce
  • lime wedges

Instructions

Preparation

  • Make the spice mix: In a small bowl, mix together chili powder, cumin, paprika, salt, white sugar, garlic powder, and onion powder. In a pinch, you can use a packet of pre-made fajita seasoning.
  • Preheat the air fryer to 380 °F.
  • In a large bowl, combine sliced chicken, bell peppers, red onion, olive oil, and the spice mix, tossing until everything is evenly coated.

Cooking

  • Transfer the mixture to the air fryer basket in an even layer to promote crisping.
  • Air fry for 15 minutes, tossing halfway through cooking. Smaller air fryer baskets may need a couple more minutes.
  • Ensure chicken reaches an internal temperature of 165 °F before serving.

Serving

  • Spoon chicken and veggies into small tortillas and add desired toppings like avocado, salsa, and lime.
  • Place any leftovers in a sealed container in the refrigerator and eat within 4 days.

Notes

Slice chicken and veggies uniformly for even cooking. Don't overcrowd the basket; cook in batches if needed for better crisping. Toss halfway through to brown both sides of the chicken and peppers. Use a meat thermometer to confirm 165 °F for safe, juicy chicken. Turn leftovers into a different meal; try recreating the flavors in a bowl like the bang bang chicken bowl for variety.
