  • 1 ½ cups chocolate sandwich cookies (crushed)
  • 6 tbsp unsalted butter (melted)
  • 8 oz cream cheese (softened)
  • 1 cup powdered sugar
  • ½ tsp peppermint extract
  • 4–5 drops green food coloring
  • 1 ½ cups whipped topping (like Cool Whip)
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 ¾ cups cold milk
  • 1 ½ cups whipped topping (for topping)
  • 2–3 chocolate sandwich cookies (crushed, for garnish)
  • Green sprinkles or mint candies (optional)

Instructions
 

  • Combine crushed cookies with melted butter and press into a 9×9-inch baking dish, then chill for 10–15 minutes.
  • Beat cream cheese until smooth, mix in powdered sugar, peppermint extract, and green food coloring, then fold in whipped topping and spread over the crust.
  • Whisk vanilla pudding mix with cold milk for about 2 minutes until thick, then spread over the mint layer and refrigerate for 10 minutes.
  • Spread remaining whipped topping over the pudding layer and garnish with crushed cookies and optional sprinkles or candies.
  • Refrigerate for at least 4 hours or overnight before slicing into squares and serving chilled.

Notes

For added flavor, consider using mint-flavored cookies or drizzling chocolate on top. This dessert can be prepared in advance, as it sets well overnight for optimal texture. Vanilla pudding can be substituted with white chocolate pudding for a different taste.
