Protein

  • 2 pieces chicken breasts Pat dry before seasoning for better browning.

Veggies

  • 1 cup cherry tomatoes Add to the skillet when cooking chicken.

  • 1 cup fresh mozzarella balls Top the chicken before covering the skillet.

Herbs

  • 1/4 cup fresh basil leaves Add before serving for freshness.

Sauce & aromatics

  • 2 tablespoons balsamic vinegar Pour over the chicken before adding cheese.

Instructions
 

Cooking

  • Heat olive oil in a large skillet over medium heat.
  • Season the chicken breasts with salt and pepper and add them to the skillet.
  • Cook chicken about 5–6 minutes on each side until browned and cooked through.
  • Add minced garlic and cherry tomatoes to the skillet, cooking until the tomatoes are slightly blistered.
  • Pour balsamic vinegar over the chicken and top with mozzarella balls and basil.
  • Cover the skillet until the cheese is melted, about 2–3 minutes, then serve immediately.

Notes

Great for meal prep and delicious as leftovers. For a brunch-friendly spread, serve with fluffy pancakes.
