Ingredients

  • 1 box vanilla wafers
  • 1 can sweetened condensed milk
  • 3 1/2 cups finely chopped pecans

Instructions

  • Crush the wafers into fine crumbs using a food processor or by rolling in a bag with a rolling pin.
  • In a large bowl, mix wafer crumbs with sweetened condensed milk and chopped pecans until thick and sticky.
  • Divide mixture into two portions. Roll each on parchment into a log about 2 inches wide. Wrap tightly and refrigerate at least 2 hours.
  • Once firm, unwrap and slice into 1/4-inch rounds. Serve on a platter and enjoy.

Notes

Toast pecans before mixing for extra flavor. Roll logs in powdered sugar, coconut, or more pecans for fun finishes. For gifting, make smaller logs wrapped in parchment and ribbon. Store in fridge up to 1 week or freeze up to 3 months.
