Ingredients
  

  • 1/2 cup olive oil
  • 1/4 cup white vinegar
  • 1 jar diced pimentos (drained)
  • 1/4 cup fresh parsley, chopped
  • 3 green onions, sliced
  • 1 clove garlic, minced
  • 1 teaspoon sugar
  • 1 teaspoon dried basil
  • salt and pepper to taste
  • 1 block sharp Cheddar cheese
  • 1 block cream cheese (chilled slightly for slicing)

Instructions
 

  • Combine olive oil, vinegar, pimento, parsley, onions, garlic, sugar, basil, salt, and pepper in a jar. Shake well to blend.
  • Slice both cheeses into 1/4-inch squares. Arrange alternately in a shallow dish for a red-and-white holiday look.
  • Pour marinade evenly over the cheese. Cover and refrigerate for at least 6 hours, or overnight.
  • To serve, transfer slices to a platter in alternating colors. Drizzle with extra marinade and garnish with herbs or cranberries.

Notes

This recipe tastes even better the next day! Pair with crackers, crostini, or crusty bread. Perfect for holiday gifting in small jars.
