Ingredients

  • 1 cup whole milk ricotta (about 8 oz)
  • 2 tablespoons honey
  • ½ teaspoon red pepper flakes (adjust to taste)
  • 1 tablespoon olive oil (optional)
  • Sea salt flakes and cracked black pepper, to finish
  • ¼ teaspoon lemon zest (optional for brightness)

Instructions

  1. Whip the ricotta in a food processor until ultra-smooth. If you don’t have one, a fork works with some elbow grease.
  2. Warm the honey slightly until it flows easily. Stir in red pepper flakes or a spoonful of chili crisp.
  3. Scoop the whipped ricotta into a shallow bowl and use the back of a spoon to make soft waves.
  4. Drizzle the hot honey over the ricotta.
  5. Sprinkle with sea salt, cracked black pepper, and lemon zest if using.
  6. Serve with sliced baguette, crackers, warm pita, or fresh veggies.
