Ingredients
Scale
- 8 oz pasta (penne, fettuccine, or rigatoni work best)
- 1 lb boneless skinless chicken breast (cubed)
- 1 tbsp olive oil
- 1 tbsp butter
- ½ cup finely chopped onion
- 3 cloves garlic (minced)
- 1 cup heavy cream (full-fat)
- ½ cup freshly grated Parmesan cheese
- ½ cup sun-dried tomatoes (chopped)
- ½ tsp Italian seasoning
- ¼ tsp smoked paprika
- ¼ tsp red pepper flakes (adjust to taste)
- Salt and black pepper (to taste)
- Reserved pasta water (as needed to thin sauce)
- Fresh basil leaves (for garnish)
Instructions
- Bring salted water to a boil. Cook pasta until al dente, reserve ½ cup pasta water, and drain.
- While pasta cooks, heat olive oil in a large skillet over medium-high heat. Sear chicken until golden and cooked through. Remove and set aside.
- In the same pan, melt butter. Sauté onion until soft, then stir in garlic until fragrant.
- Lower the heat and pour in heavy cream. Stir in Parmesan cheese slowly until melted.
- Add sun-dried tomatoes, Italian seasoning, paprika, red pepper flakes, salt, and pepper. Simmer gently for 3 minutes.
- Return chicken to the skillet. Stir to coat, then add pasta and pasta water. Mix until the sauce thickens and coats everything.
- Taste and adjust seasoning. Garnish with basil and extra Parmesan before serving.
