Description

Sweet. Savory. Crispy. These honey glazed carrots and green beans are everything you want in a cozy veggie side. Think tender carrots, perfectly roasted green beans, and a glossy honey-balsamic glaze that makes everyone ask for seconds.


Ingredients

  • 4 medium carrots, peeled and chopped
  • 2 cups fresh green beans, trimmed
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Optional: Fresh parsley or toasted sesame seeds for garnish

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment or foil.
  2. Wash and trim green beans. Peel and chop carrots into uniform bite-sized pieces.
  3. In a large bowl, whisk olive oil, honey, balsamic vinegar, garlic, thyme, salt, and pepper.
  4. Add carrots and green beans, tossing to coat evenly in the glaze.
  5. Spread veggies on the baking sheet, spacing them out for proper roasting.
  6. Roast for 20–25 minutes, checking for fork-tender carrots and slightly crispy green beans at 20 minutes.
  7. For caramelized edges, broil for 1–2 minutes at the end.
  8. Remove from oven, garnish with parsley or sesame seeds, and serve warm.

Notes

For less sweetness, reduce the honey and increase the balsamic vinegar. Add red pepper flakes for heat, or swap thyme with rosemary or oregano. These can also be sautéed instead of roasted.
