- 2 pounds cremini mushrooms, sliced lengthwise
- 2 tablespoons olive oil
- 1 tablespoon soy sauce (or coconut aminos)
- 3 cloves garlic, chopped
- ½ teaspoon chopped thyme
- 1 tablespoon chopped fresh parsley
- ¼ teaspoon salt and pepper (to taste)
- ½ teaspoon red chili flakes (optional)
Instructions
- In a large bowl, mix olive oil, soy sauce, garlic, thyme, salt, pepper, and chili flakes.
- Toss in the sliced mushrooms and coat well. Let them sit for 30 minutes (this is when I soak the skewers in water to prevent burning).
- Skewer the mushrooms—twisting them slightly helps them stay in place! Grill on medium-high heat, about 2–3 minutes per side, until charred and tender.
- Transfer to a platter, sprinkle with chopped parsley, and serve warm. I dare you not to sneak one before it hits the table.
Notes
Don’t skip soaking the skewers—they’ll burn otherwise. Wipe mushrooms with a damp cloth instead of rinsing them. Twist the mushrooms as you skewer them for a better grip.
