Ingredients

  • 2 pounds cremini mushrooms, sliced lengthwise
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce (or coconut aminos)
  • 3 cloves garlic, chopped
  • ½ teaspoon chopped thyme
  • 1 tablespoon chopped fresh parsley
  • ¼ teaspoon salt and pepper (to taste)
  • ½ teaspoon red chili flakes (optional)

Instructions

  1. In a large bowl, mix olive oil, soy sauce, garlic, thyme, salt, pepper, and chili flakes.
  2. Toss in the sliced mushrooms and coat well. Let them sit for 30 minutes (this is when I soak the skewers in water to prevent burning).
  3. Skewer the mushrooms—twisting them slightly helps them stay in place! Grill on medium-high heat, about 2–3 minutes per side, until charred and tender.
  4. Transfer to a platter, sprinkle with chopped parsley, and serve warm. I dare you not to sneak one before it hits the table.

Notes

Don’t skip soaking the skewers—they’ll burn otherwise. Wipe mushrooms with a damp cloth instead of rinsing them. Twist the mushrooms as you skewer them for a better grip.
