- ¾ cup Arborio rice
- 4 cups whole milk
- ½ cup granulated sugar
- ¼ tsp salt
- 1 tbsp unsalted butter
- 1½ tsp vanilla extract
- Ground cinnamon (optional)
Instructions
- Rinse the rice under cold water until mostly clear to remove excess starch.
- In a heavy-bottom saucepan, warm the milk with sugar and salt over medium heat, stirring gently.
- Add the rinsed rice and reduce the heat to low. Let it simmer while stirring often.
- Continue cooking for 30–35 minutes, until the rice is soft and the mixture thickens into pudding.
- Remove from heat and stir in vanilla and butter for extra creaminess.
- Serve warm or chilled, topped with a pinch of cinnamon if desired.
Notes
Use Arborio rice for the dreamiest texture. Stir often and simmer low and slow. Add a splash of cream or sweetened condensed milk at the end for extra richness.
