Description

Nothing calms a stormy heart like a warm bowl of rice pudding—rich, nostalgic, and creamy enough to make any day feel a little sweeter.


Ingredients

  • ¾ cup Arborio rice
  • 4 cups whole milk
  • ½ cup granulated sugar
  • ¼ tsp salt
  • 1 tbsp unsalted butter
  • 1½ tsp vanilla extract
  • Ground cinnamon (optional)

Instructions

  1. Rinse the rice under cold water until mostly clear to remove excess starch.
  2. In a heavy-bottom saucepan, warm the milk with sugar and salt over medium heat, stirring gently.
  3. Add the rinsed rice and reduce the heat to low. Let it simmer while stirring often.
  4. Continue cooking for 30–35 minutes, until the rice is soft and the mixture thickens into pudding.
  5. Remove from heat and stir in vanilla and butter for extra creaminess.
  6. Serve warm or chilled, topped with a pinch of cinnamon if desired.

Notes

Use Arborio rice for the dreamiest texture. Stir often and simmer low and slow. Add a splash of cream or sweetened condensed milk at the end for extra richness.
