Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg, then stir in vanilla extract, almond extract, and maraschino cherry juice.
  4. In a separate bowl, whisk together the all-purpose flour, almond flour, and salt.
  5. Gradually blend the dry ingredients into the wet mixture until just combined.
  6. Fold in the chopped maraschino cherries and, if using, mini chocolate chips.
  7. Chill the dough in the refrigerator for 30 minutes to help it firm up.
  8. Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
