- 4 Roma tomatoes (diced and seeds removed)
- 1 clove garlic (minced)
- 1/4 cup fresh basil (chopped or torn)
- 2 tablespoons extra virgin olive oil
- 1 teaspoon balsamic vinegar (optional)
- Salt and pepper to taste
- 1/2 cup mozzarella pearls or diced fresh mozzarella
Instructions
- Dice the tomatoes and remove any excess juice or seeds.
- Mince the garlic and chop the fresh basil.
- In a mixing bowl, combine the tomatoes, garlic, and basil.
- Add the olive oil and balsamic vinegar (if using).
- Season with salt and pepper to your taste.
- Gently stir in the mozzarella pearls or chunks.
- Chill in the fridge for 10–15 minutes to allow the flavors to blend.
- Serve chilled with crostini, crackers, or sliced veggies.
