Ingredients

  • 4 Roma tomatoes (diced and seeds removed)
  • 1 clove garlic (minced)
  • 1/4 cup fresh basil (chopped or torn)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon balsamic vinegar (optional)
  • Salt and pepper to taste
  • 1/2 cup mozzarella pearls or diced fresh mozzarella

Instructions

  1. Dice the tomatoes and remove any excess juice or seeds.
  2. Mince the garlic and chop the fresh basil.
  3. In a mixing bowl, combine the tomatoes, garlic, and basil.
  4. Add the olive oil and balsamic vinegar (if using).
  5. Season with salt and pepper to your taste.
