- 6 small flour tortillas
- ⅓ cup melted butter
- ¾ cup crushed vanilla wafers or graham cracker crumbs
- 1 teaspoon cinnamon or apple pie spice
- 20 ounces apple pie filling (canned or homemade)
- ¼ cup heavy cream or full-fat coconut milk
- Whipped cream and caramel sauce for topping
Instructions
- Brush tortillas with melted butter on both sides, then press them into the crumb and cinnamon mixture. Let them sit for a few minutes to help the coating stick.
- Drape the tortillas over the oven rack or place them upside down on a muffin tin. Bake at 375°F for 8–10 minutes until golden and crisp. Let cool completely to harden.
- Warm apple pie filling in a saucepan with cream until bubbly and thick. Stir in a pinch of nutmeg if desired.
- Spoon the filling into cooled taco shells. Top with whipped cream and drizzle with caramel. Overflowing apples are highly encouraged!
Notes
Substitute coconut oil for butter or use gluten-free tortillas if needed. Let the shells cool before filling to keep them crisp and prep them a day ahead if needed.
