  • 1 1/2 cups graham cracker crumbs or digestive biscuits
  • 1/4 cup brown sugar

  • 3 small apples, peeled and chopped
  • 1 teaspoon cinnamon
  • 1 tablespoon sugar
  • 1/2 cup all-purpose flour

  • 4 tablespoons cold butter, cubed
  • 3 blocks (8 oz each) full-fat cream cheese, room temperature
  • 1 cup granulated sugar
  • 1/2 cup sour cream, room temperature
  • 1 teaspoon vanilla extract
  • 3 large eggs, room temperature

Instructions

  1. Preheat oven to 325°F and line a 9-inch springform pan with parchment paper.
  2. In a bowl, combine graham crumbs, brown sugar, cinnamon, and nutmeg. Stir in melted butter until the mixture resembles damp sand.
  3. Press into the prepared pan and bake for 10 minutes. Let cool.
  4. Toss chopped apples with cinnamon and sugar. Set aside.
  5. In a separate bowl, combine flour and brown sugar. Rub in cold butter with fingers until chunky crumbs form. Chill in fridge.
  6. In a mixer, beat cream cheese until smooth. Gradually add sugar and beat until fluffy.
  7. Mix in sour cream and vanilla just until combined. Add eggs one at a time, mixing gently and scraping down the bowl.
  8. Pour filling over crust. Layer apples on top, then sprinkle with crumble.
  9. Wrap pan in foil, place in a roasting pan, and pour hot water around base for a water bath.
  10. Bake for 70 minutes. Let rest in the oven for 1 hour with the door cracked.
  11. Cool completely, then refrigerate for at least 6 hours or overnight.
